Ingredients:
- 1 small eggplant, cut in half vertically
- 3 tablespoons olive oil, avocado or macadamia nut
- 1 diced onion
- 12 asparagus or green beans, diced
- 1 red pepper, diced
- 1 large tomato, chopped
- 2 cloves garlic, minced
- 1/2 piece (8 ounces) of extra strong tofu (optional)
- 3 tablespoons chopped fresh basil leaves
- Salt
- Freshly ground black pepper
- 1/4 cup of water
- 2 eggs
- Fresh parsley, chopped for decoration (optional)
- Chopped cheese for decoration (optional)
Route:
1 -> Preheat oven to 350 degrees Fahrenheit.
2 -> Cut the eggplant meat in half and cut into cubes. Keep the skin of eggplant.
3 -> In a wok with a lid, heat the oil at medium and high temperature. Add eggplants, onions, asparagus, peppers, tomatoes, garlic and tofu (if used) and mix well. Add the basil, season with salt and pepper and cook for about 5 minutes.
4 -> Add water, cover the pan, reduce heat to medium and cook for about 15 minutes.
5 -> Place the eggplant "ship" (reserved skin) on the baking sheet. Pour some cooked eggplant mixture into each pot (you may have some filling left, which is good; you can bake it with eggplants).
6 -> Beat the eggs in each eggplant canister, complete the filling, then bake for about 40 minutes, or until the desired finish is completed.
7 -> Remove the eggplant from the oven and sprinkle with cilantro and cheese if necessary. Let the cheese melt and cool for about 5 minutes, then serve it!
Tip: You can add any vegetable in your hand to this recipe: leeks, broccoli, broccoli, cabbage ... This list goes on. This recipe can help you get rid of vegetables that can be destroyed on the second or second day!
